My gastronomic journey began in 2009 in Crete and gradually evolved through years of experience in leading hotels and distinguished restaurants across London, Crete, and Germany. Exposure to diverse culinary cultures, demanding standards, and high-level professional environments shaped a philosophy rooted in discipline, precision, and respect for the ingredient. Sharing this accumulated knowledge with emerging culinary professionals became a natural extension of this path — a role embraced alongside continuous work in professional kitchens.
This journey led to the creation of The Siton Table: a conscious return to honesty and the true essence of flavor, free from unnecessary embellishments. Centered around “Siton” — the foundation of the table — we focus on the purity of ingredients and consistent quality.
